Pomegranate Wine

3 Quarts 100% Pomegranate Juice (no preservatives)
1 Quart 100% Red Grape Juice (no preservatives)
1 1/2 Pounds Granulated Sugar
1/4 tsp Wine Tannin
1 tsp Acid Blend
1 tsp Yeast Nutrient
Lalvin D47 Yeast

Heat the red grape juice in a pan and add the sugar, stirring until dissolved. Add the sugar/grape juice mixture, the pomegranate juice, tannin, and acid blend to a primary and stir thoroughly. Stir in yeast nutrient and sprinkle ½ packet of Lalvin D47 on top of the must. Cover and ferment for 7-10 days or until SG is around 1.0. After the SG reaches 1.0, rack into a secondary. Rack after 30 days, then again after another 30-45 days. Once the wine has completely cleared, rack once more, then degas and stabilize. Back sweeten to taste if desired, let settle a week, and bottle. Age for a year or longer.
